A ham hock (or pork knuckle) is the joint from the pig's lower leg, where the foot meets the leg, prized for its rich flavour from bone, fat, and connective tissue, making it ideal for slow cooking in soups, stews (like split pea), and braises for tender, flavourful meat and gelatinous stock. It's an economical cut, available smoked or unsmoked, and adds a deep, savoury pork essence to dishes, often cooked until the meat falls off the bone.
