Ruff Side Shoulder this is a harder working part of the shoulder so suited to slower cooking but full of flavour 1.2kg
Breeds are Texel and Suffolk (best meat breeds there are)
What is hogget? Well it’s last year lamb kept through the winter and finished at about 18 months of age.
They have more taste than lamb but require slightly slower cooking and a little resting time but the flavour is so worth the wait plus the sheep gets a better, longer life.
