Free Range Grass Fed Native Bred beef topside

These are grazed through the summer on the RSPB Ouse washes at Welney Cambridgeshire where they graze the natural flood lands.

We produce all our own hay and silage for home feeding in the winter and bale straw off neighbours fields, waste veg and apples are fed too all our livestock along with the correct minerals. Through this we hope it brings you the best meat we can from natural fed slow maturing cattle.

Topside pf beef

What I immediately noticed about the beef when I unwrapped it was the amount of marbling in the meat, I think this was from the Jersey cow if memory serves me right. Anyway it had really good marbling, sadly I slightly overcooked it, usually cook a 1kg joint for 45-50 minutes , however I forgot the time and cooked it for just under an hour. The beef was not as rare as we normally like it to be, but it carved very well and it was very flavoursome with a good texture, not at all tough, the dog ate his and was pestering us for more , always a good sign he approved. I just hope the rest of the other 3 x joints of topside I have in the freezer are as good as this one. So thanks Paul for the lovely beef. I will be back to buy some more in a month or two.

Unfortunately we have not tried any of the 4 x joints of topside beef yet, we have frozen them for use over the coming weeks. I have however had two previous joints of topside of beef, and they were both well cut and presented , I cooked them rare as that is how we like our beef in our house. The beef cooked beautifully , and it ate very well, very flavoursome, even the dog approved, he ate his portion in record time. Based on the quality of the first two beef topside joints I was happy to order another 4 x topside joints for my freezer. I will do another reveiw once we have had a chance to eat one.
