What I immediately noticed about the beef when I unwrapped it was the amount of marbling in the meat, I think this was from the Jersey cow if memory serves me right. Anyway it had really good marbling, sadly I slightly overcooked it, usually cook a 1kg joint for 45-50 minutes , however I forgot the time and cooked it for just under an hour. The beef was not as rare as we normally like it to be, but it carved very well and it was very flavoursome with a good texture, not at all tough, the dog ate his and was pestering us for more , always a good sign he approved. I just hope the rest of the other 3 x joints of topside I have in the freezer are as good as this one. So thanks Paul for the lovely beef. I will be back to buy some more in a month or two.
